Too many duck eggs!

Baking with duck eggs is great. Otherwise, I slip one in with a couple chicken eggs for scramble / omellette breakfast.

You know I didn't think about that but I'll get on it.

These are just the ones that I thought would be good for meals other than breakfast or snacks, and in the case of new orleans style I thought it would actually be healthy with so many veggies. But, there's a whole lot of stuff in that book that I never thought of-- some of it dated, but none the less good ideas to use up eggs. Lots of fatty stuff with cream sauces that would be best served in moderation today, and two pages of drinks (hot and cold) that use raw eggs!

Scrambled eggs is one of the things I will not use duck eggs for... in my experience they cook to quickly and get rubbery. Best to mix them with chicken eggs for that-- However french toast with duck eggs is out of this world! Take a big loaf of french bread or homemade white, slice it thick, dip it in the raw scrambled duck egg on both sides, dip the dredged bread in crushed corn flakes, cook on a griddle on low heat= perfection on a plate.

One of these days I may go through and just type out every recipe in the book for the database

You know I didn't think about that but I'll get on it.

Loved those recipes. made me hungry . My dh won't eat a duck egg, so I bake with them and when I cook eggs for egg salad I put a couple duck egg in the pot and mix them in with the chicken eggs, he never notices.

When the duck eggs start filtering into my fridge, I'm not going to make a ceremony out of it, I'm just going to start cooking with them instead and I doubt the family will know the difference. Don't give them the opportunity to psyche themselves out.
If I had non farm oriented company over for dinner, and I prepared a chicken I raised myself, I wouldn't tell them before they even pick up the fork that the chicken came from the back yard, not the grocery store.
People who are new to farm foods have all kinds of preconceived notions that color how they will receive the food.
 
I traditionally make deviled eggs for family get together s. With Thanksgiving coming, deviled eggs are on the menu. Hubby says we have to buy chicken eggs to make for 'company.' With 18 duck eggs in the refrigerator, and 2 new everyday, I am thinking no one will know the difference if I devil duck eggs! Anyone think different?
 
wow, i dont see any diference in taste, i love the extra yoke in duck eggs though. try scrambling them mixed with chicken eggs. maybe 1 duck egg to 3 or 4 chicken eggs and slowly change the ratio adding more duck and less chicken. people like what they are used to, its a mental think. i bet after a month of mixing they wont tell the difference
 
With an egg over easy sometimes the duck egg white can get rubbery. You have to be careful not to overcook the white. Otherwise, I notice a slight difference in taste, but not enough to put me off. I love them scrambled with onion and peppers and cheese in them... ok, its more of an omelet! I haven't bought chicken eggs more than once or twice in the last several years. When we started, I was a bit squeamish about the duck eggs, but made myself eat them (always good in baked goods!). Now I just eat them.
 
I love them cooked over medium. The yolks are double-y yummy, I think. They are really thick and dark and, well, yolky. My favorite way to eat them so far, with steaming them tied for first! When I get enough (eating them faster than they are laying them!) I am going to steam them and then devil them! Steaming is the way to go if you liked boiled eggs.
