too many eggs

I scramble mine then spread them on the dehydrator trays. When dried thoroughly, I put them in the food processor til they're powdered, then in a canning jar with a tight lid and into the fridge for storage.
This sounds interesting. We have 9 dozen eggs in the fridge right now! I'll have to check this out. I remember my grandmother use to buy powdered eggs when I was a kid. They used them in their restaurant. I always liked how they tasted scrambled better than a fresh cracked egg. LOL Call me strange. I've checked out dried egg powder on the Internet. It's very expensive to buy.

They're great for cooking but not for reconstituting and eating. Two T eggs and 1/4 C water equals a large egg.

Oh, and I should mention that I scramble them "straight"...in a coated pan with no milk, water, oil or seasoning.
