Don't beat yourself up. We are all different and we change as we grow. You just have to find your own way. If that means your sister, that means your sister. If the killing part is the only problem, maybe get your spouse or partner to do that.

We found a local gal that processes poultry for people. She’s got a decent set up and she’s only 15 minutes away. I found her through a friend.
She is getting so many customers now that she quit her job to do this full time. She doesn’t advertise though; just word of mouth.
I think you could also find someone by advertising at your local feed store, etc.
I feel the same way as you: I just can’t slaughter m own. I’m grateful to have found someone I can pay to do it.
