Topic of the Week - What do you do with all those eggs?

YYYESSSS!!! i cant believe it took me so many pages to find some awesome pickled eggs. im on the hunt for a great recipe, a lady here locally makes the best pickled eggs with banty eggs. they are not vinegary like most but almost like a marinated egg. oh i can sit and eat them all day! and the peppers, onions and other veggies she puts in there....YUM! ive also heard about dehydrating eggs. but i have yet to try them. seems you scramble,cook, dehdrate, grind to powder and store. then to use you reconstitute, scramble and im guessing they would be best for baking recipes. i have for years frozen excess eggs in muffin tins( yolks broken first) and my favorite is stocking up on breakfast sandwiches and burritos for quick grab and heat breakfasts during the week.
awe man this is making me hungry, i might have to go grab a sandwich! we love eggs in this house hold
 
I feed back the small pullet eggs to the hens,
Bake pound cake or make pancake batter to keep in the fridge ,
But as others have said i sell a lot so when people buy 4-6 dozen at a time .... I'm not usually left with extra

Since our neighbors helped us get eight 1 year old BRs, and use their flatbed trailer to go pick up the already built coop and fencing we feel we owe them, so we give extras to them for now. We are grateful. But we also operate our house as a B and B so come summer travel season we'll use up eggs fast!

We also have 6 3 week old chicks, so when the 8 BRs go into fall molt, the young ones should be kicking in to keep us supplied. At least that's our hope.

I sell the extras. We really don't eat a lot of eggs, nor do I do much baking. I sell up to 5 dozen eggs/week, and could sell more if I had them. My customers are loyal. I often have folks ask what I do with extra eggs. They ask how much I charge ($3). But, those "askers" are more often than not looking for free eggs. Rarely do I give eggs away. But I do barter with them. The chicks have been getting scrambled eggs almost every day. Those little buggers are growing so fast. 2.5 weeks old now, and spent most of the day out in their run.
 
I give mine away to people at church. My Bantam, who lays tiny white eggs, has become a celebrity among the pastor's kids because of her size and tiny eggs. They call them dipping eggs.
