Tough Meat when cooking birds...

You can try cleaning them and then storing them in the refrigerator a few days. That is supposed to help. How old are these birds? That might be a consideration, but I'm just assuming they are young enough to be tender.
 
You really should put them in brine or at least let them rest for a few days. Check this link out, it has great info. on cooking birds of all different ages.

Let them rest in ice or the refrigerator for atleast 24 hrs. I tried cooking a "fresh" chicken once... not good.

I'm not sure a brine is needed. Letting it rest till the rigor is out of the bird is more important. The brine just keeps the moisture in the meat making it juicy.
