Toulouse pair laying need advice!

my Toulouse pair is laying regularly as of last week.

I don’t think I should leave the eggs out because it’s getting below freezing at night, we have no sign of brooding from her....

How long will the geese eggs last for hatching if she’s not ready to sit?

These are my first geese and I read they only lay 30 or so eggs a year. Is it better to hold these back and let her hatch during the summer?

If it's getting below freezing the eggs may freeze and won't be any good. I'd take these and use them she'll keep laying up into spring once the weather turns off better let her sit.
 
No guarantee that she will go broody. The first eggs are often not fertile. I crack them open and bake with them until I hit a fertile one. Typically by #4 can count on it being fertile if the gander is reading the rule book.
You can collect eggs for 2 weeks. Let them sit on the counter and turn 2x daily. Date them. Do not wash. At 2 weeks you either fire up the incubator, sell the eggs or feed them to the dog.

Agreed. There is no guarantee she is going to set. And no guarantee how many she is going to lay either. It depends not only on the breed but varies with individuals as well. For instance my Sebastopols only lay about 10-12 eggs each in February then they are done for the year. So I'd keep eggs for a bit and see if she'll set them later. Or just set them in an incubator if your able to.
