It's called Toweling or Towel Restraining.
Miss Lydia's description is correct. If you can, try to get the top of the towel a little above the head, that way they have something to chew on besides you. I haven't had a duck since I was little, and I don't remember their biting to be too bad, but my parrot could snap a finger in half with one chomp.

Ducks are pretty big, so you have to worry less than with little birds, but it's important not to restrain to tightly around the chest (see 1st linked video below). If they're not used to handling, they'll get stressed quickly. Depending on your animal, either go slow and be calm and soothing, or get it done fast and get it over with. (If it's the latter, I highly recommend going to the vet so he/she is the "bad guy" in your animal's mind.) Ducks are built different than parrots, and they don't tolerate being flipped on their backs as well, so carefully watch for stress if you have to flip them (and try not to if you can help it).

Here are a few videos that show the technique, mostly for parrots, but useful nonetheless:

Here are a few other methods:

If you're really uncomfortable, go to your vet and have them show you for the next time. Give a nice treat afterward and keep it separated from the flock for a little while until the stress is over. (Probably a good idea to do the deed away from the other animals anyway, I remember my duck would come after me when I took stickers out of my dogs' paws.)

I want to put a towel/sock on my chickens head to dust them down cause of lice, and I'd like to prevent them breathing it in as much as possible. Would this be okay/ can they breath in there

I think you'd be better off wearing a mask and goggles yourself and holding them butt facing front, head under your arm; do it close to bedtime. I say that because the amount of time and powder you're going to waste and the trauma your chickens will go through fighting them to keep that sock on probably isn't worth it. If they're really docile, yes, they could breath through a thin sock worn like a hood, but wrapping the head in a towel isn't a good idea, and don't make it tight or grip their neck to keep it on. Contact the supplier of the lice powder or look on their website for recommendations.
