Hello all, please bear with a stupid question from a newbie to this site, but all input would be very helpfull.....I currently own 10 chickens/hens(polish,marans,americanas),they free roam around my yard and also get grit, table scraps, cracked corn, fruits and veggies for treats, and are mainly feed with game bird crumble for extra protein and winter weather...plus I own pheasants and quail also, but are seperated. My girls are laying plenty of eggs and appear to be friendly, fat, healthy, looking looking birds? I am an avid weight lifter, so eggs are very important to me for protein and growth, but this is my problem....Everytime I boil a clutch of my eggs, the shell sticks to the whites of the eggs, leaving me with a pint sized version of the original? This does not happen to me with store bought eggs? What can the problem be?????

Because the eggs in the store you buy are older. Fresh eggs are hard to peel!! I've read thread after thread on how to get a fresh egg to peel and finally came up with using 2 posters idea and it works perfectly everytime. Start off with cold water, use ALOT of salt (like 1/4 - 1/2 cup depending on how many eggs your boiling) add a couple tablespoons of oil, when it starts boiling time it for 18 minutes rinse off and peel! They pretty much slide right off!! And just to let you know that much salt will not make the eggs salty when eating them!!

It's because your farm eggs are too fresh for hard boiling. If you let them sit in the fridge for a week then they will dehydrate a bit and be easier to shell. Store bought eggs have had sit time. That's the difference. :)

I belive I heard somewhere that fresh eggs will do that but older eggs won't (like a week old). I hard boil our eggs that have been here the longest and usually don't have too much trouble with the white sticking to the shell. I also started making hard boiled eggs by putting the eggs in the pan and covering with COLD water and then leaving the lid off the pot wait until it comes to a boil and then put the lid on, remove from the heat and let stand 15 minutes. This method seems to be better than my old method of putting them in the pan and just letting them boil until done.

Great idea to let the eggs sit in the fridge for a week. To cook: place eggs in a pot and cover with at least one inch of water, bring to a boil, cover pan, remove from heat and let sit 10 min. After 10 min pour off hot water, place eggs in ice bath to cool quickly. Refrigerate. You should have no problem removing the shell or with dark rings around the yolks. Happy eating, I'm sure all the good protein is better than Popeye's spinach for your muscles.
