Turkey can be ground to use like hamburger, very nice to do with the dark meat, as it stays moister. I haven't made sausage yet, but have a lot of recipes for turkey sausage, which I can't wait to try.
Don't forget the carcass! Make delicious turkey stock and can or freeze in pint or quart sized jars or containers. I love having stock around. At $4.00 a quart for low sodium stock/broth nowadays, the carcass is almost worth more than the meat!
I feed turkey necks/wings to my dogs and cats. I actually buy forty pounds a month from my raw meat coop, not the cheapest but less than whole turkey usually runs. I can sometimes buy whole turkeys on sale for less so I look for really cheap turkey sales. Now that I have a huge freezer, I plan to stock up since I can use a turkey for about 10 days of dog/cat food. I would feed it every day, they need a lot more red meat and less bone but when turkey is .70-80 cents a pound, my family and pets will eat turkey!
