turkey slaughter

I got turkeys this spring and this is our first turkeys, do we slaughter them at a certian week or can we wait all the way tell right before thanksgiving then due them in?

whats standard procedure for the turkeys?

Depends on the breed.
Commercial birds are much faster then heritage.
My heritage wouldn't be ready until Christmas.
