turkey waddle color

im new to turkeys and was wondering what the different colors of the jakes waddle means it goes from white to red and back again in an instant it is amazing to watch any ideas would be great and very helpful

My turkeys' waddles (and head for that matter) seem to change color with moods. If I make certain noises when I am sitting with them, they will all turn bright red, even the hens. Make different noises, and they seem to calm down and go pale. But sometimes they are all red for no apparent reason. It is amazing how fast they can change color.
