is turning more times a day better? is turing 144 times/day (ever 5 minutes) better than 3 (8 hours, a lot of people do this)?

Somehow I picture dizzy chicks at hatching but the human egg turner wouldn't know this as they passed out from lack of sleep days before.

It's doubtful broody hens turns their eggs every 5 minutes day and night.

I agree with the other post. At least three times a day is good if you are hand turning the eggs. Some do turn there eggs more often but it is not necessary but it doesn't hurt either.
