Not all roosters will develop spurs, and sometimes hens can grow them. It isn't a reliable way to tell gender. The male saddle feathers are very thin and start fairly high up on the back and hang down. Your laced Wyandottes may appear to have pointed feathers, but they are probably broad and it's the pattern of the black lacing that is making them seem pointed.
