Uncommon Recipes

I use that smoked salmon recipe, only I make a brine with the sugar and salt. Works for venison too! I think I smoked with hickory this past year, was wonderful. And all the jerky was gone within a week, even tho I made a couple of pounds (dry weight)

BBQd is how I would cook a coon if I were to eat one, but I haven't been able to bring myself to do so yet.

Anyone try beaver?? Now that IS good. Just like beef, but more tender and juicy.
