We have always kept ours on the counter as well UNLESS they are washed if they are cracked we feed them back to the chickens...they LOVE it. And if we plan on selling for eating eggs we do refridgerate right away too. The ones WE plan on eating we keep out...I was once told by Miss Prissy that they taste better leaving them at room temp before cooking, and you know, they really do

When you wash an egg you remove the bloom, a protective coating of sorts that the hen applies to the egg during the laying process. With the bloom intact, dirt and germs are sealed out. Without the bloom, they spoil faster.
ETA: If you must wash an egg, it is best to do so in water at least 20 degrees warmer than the egg itself. Cold water causes the pores in the eggshell to contract, pulling exterior dirt and germs into the egg. Warm water causes the pores to open, pushing the dirt to the outside.

I have read this a bunch of times but never remember if it's warm or cold I should be rinsing over the eggs

The few times I have tried to clean off a muddy egg, I took a pape towel, wet it, wrapped it loosely around the egg, gave it a tiny squeeze, left it there an hour and when I came back all the debris was loose and could be lightly wiped away and it still felt like the bloom was on the egg.

I was washing and refrigerating our eggs till I was educated that they can are just as good and actually better nutrients if they are unwashed and unrefrigerated. I was told that either may take away some of the nutrients. Now they sit on the counter til we use them and have had no problem.

Are you all out of room in your refrigerators? I wash the ones that are dirty and then stick them all in the fridge. Your refrigerator is running anyway, might as well use it...

I have only had dirty eggs when it has been raining for a couple of days. My hens lay in their nests and the eggs are clean. If not for some reason, I wipe the egg off with a paper towel. But in my house we just wash the eggs before cooking.
