using duck eggs for baking?

Hi,
I was looking to buy some duck eggs for baking and i wanted to know would i have to buy a specific breed of duck eggs for baking to be the best? Like if i used Khaki Campbell eggs for baking would that be the same if i used mallard duck eggs or indian runner eggs? Does it matter what breed of duck eggs i use?

The breed of duck does not significantly affect the flavor or use of the egg. When you buy chicken eggs, they may come from any number of breeds and be basically the same except in color, size, and shape. Same with ducks. They are outstanding for baking. Enjoy!
 
I agree with everything iamcuriositycat said, but also wanted to add:

If you want LOTS of eggs, a Campbell or a Runner would be better. Mallards just don't lay as many eggs. As far as flavor/quality for baking goes, as long as you feed them a good diet, they're all pretty much the same. Mallard eggs may be a bit smaller. The Campbell and Runner eggs I'm getting right now are HUGE - depending on the recipe, I sometimes use one big duck egg in place of 2 chicken eggs.

with chicken eggs i have found...

the more insects a chicken and most likely a duck is fed... the richer and oranger the yolk is... makes for excellent boiled eggs
 
Just thought I would add in that I have been colecting eggs from my scovy girl for incubating and today when I pulled the egg out of the coop I dropped it and it cracked so I thought I would eat it and not waste it.When I cracked it into the frying pan I was amazed at how big the yolk was compared to the egg and I dont know if it was just me but I thought it tasted a little bit better then normal duck eggs IMHO.

I'll probably get some indian runner duck eggs, because of their larger size egg compared to a mallard duck egg. This way i can substitute 2 chicken eggs for 1 duck egg.
