Speaking of egg yolks, I just have to say this, I eat the whites only quite frequently, but then I really blow it because I make Hollandaise sauce with the yolks and pour it all over the whites, and everything else. That sauce is just the best thing ever. But all that butter.....haha such a bad bad idea. But so yummy. I try to eat it on veggies to make it partially a good thing.... but....I can't lie.... I can eat Hollandaise sauce on everything, or drink it like soup.

Got my babies today, none dead! The box was large, and very airy! One end was open so much, my husband and I said, they sure could get out easy that way. Two are missing. A Silver, and a black crested.
They seem to be coming around pretty quick. I hope they all make it..makes me sad to think of a couple of chicks walking around out there in the big bad world. Hope someone or a couple of someones decided to take a free chick home.

I will post recipe, you post chick pics! When you decide how many to sell, I would take as many as 2 buff and 1 each of the others....I sure hope the little missing babies are ok!
Hollandaise:
1/2 c butter
3 large beaten yolks
1 T water
1 T lemon juice
dash white pepper
dash sea salt

Cut butter into thirds, bring to room temp.

In a double boiler, combine yolks, water, lemon juice, pepper, salt, and one piece of the butter. Place over boiling water, don't let upper pan touch water. (I just put a glass mixing bowl on my 3 qt saucepan with an inch or so of water.) Cook, whisking rapidly until butter melts and sauce begins to thicken. Add the second piece of butter, keep whisking, then the last piece, keep whisking. Cook about 1 minute more, til sauce is nice and thick.

You have to serve it immediately, it starts to seperate after it cools, sometimes you can add a tablespoon of hot water and whisk it to get it to emulsify back together again. It is kind of like homemade mayonnaise this way. It is way better right after you make it though. This is why it is so tempting to eat the whole batch. You can put it on veggies, that is the best, baked potatoes, meat, anything really. Even eggs it is fattening but wow it is yummy and it takes just a few minutes to whip up. If there are veggies my kids won't eat, this will do the trick just about every time. I grilled peppers and onions and ate them on toasted sourdough the other day, smothered in this with a little tobasco. Yum.

Going to the Utah County Fair. It started today. I did not enter any birds, but I have a friend that has a few of my birds and entered them...the Pencil is one, and she said the Judge couldn't get over her. He said, this, is what people want to see when they are breeding these. Well, she had trimmed the wings, not knowing that would be a problem..? The little stink had been flying over the neighbors fence. And, another one that would have made the top whatever it is in bantams, but didn't because it wouldn't stand up. This little Silkie, is carried around the house like a pet cat by her son. Remember the story of her looking for her son, and found him down watching t.v. sharing cereal with this chicken? Waaay laid back. Would just lay back down when the judge wanted it to stand. He told her it would have made it to best, but he couldn't do it because of that. She has my Sussex. That girl made best in all of the chickens there. I don't know what they call of these things..I've never done this. I'm going to go look now. It didn't open until 4 this afternoon. He told her that she had some nice birds. She clipped the pencils wings, and the Delaware, which he or she, was also impressed with. That is the bird I would of thought would come out on top..she is just beautiful. She was getting into the neighbors yard along with the Pencil. No clipped wings in a show..makes sense.

Wow! That's so great that your (used to be) chickens are doing so well at the fair. Bummer about the clipped wings. It makes me smile and chuckle a bit when I think of that little Silkie not standing up. So cute! I guess that's what happens when you spend all of your time watching TV and eating cereal. Totally out of shape

no they aren't leaving until tomorrow at 4 AM They had to delay a day because one of the chickens going to Oklahoma is showing at the Utah county fair.

One other funny thing, This vet tech is leaving tomorrow to start vet school in Colorado. She is very good with all animals except birds of any sort due to a child hood trauma. Not sure how vet school is going to work out with that phobia

my friend Carolyn called me she is the Veterinarian in Orem. Her kids entered all their chickens in the Utah county fair. The Turkin is hers as well as a black Silkie white cochins and several others. When I was starting out in the chickens she said buy one for me when I bought one for myself. She has kids and they love the chickens. Her white Cochin got reserve Champion of the fair. Pretty funny because that girl was suppose to be mine but when her chchin turned out to be a rooster her kids begged me to give them the girl. its pretty funny because her son that is 4 took over the white cochin when they first got it. He named it after himself. Colton. That rooster has gotten kind of mean but it loves Colton and has never gone after him, It has Carolyn and the other kids. The trip to Oklahoma was delayed a day so Colton the Rooster can be picked up from the fair tonight and taken to the ranch in Oklahoma,

Call the post office and call where you ordered them. If the order is short they will replace them. The post office may have chicks running around and not sure where they go. When my husband worked at the post office it happened all the time. The chicks would get out and hide. The box would go out and then the chicks would come out and no one was sure where they went. What was really bad was when they had 100 boxes of chicks and the chicks were running around. They just stuck them in any box so there were surprise deliveries. He worked at the main Post Office in SLC and was always amazed at how many boxes of chicks go through there in the spring

Yikes! Sundance, that's something I hadn't ever considered about ordering chicks. I'm seconding the whole call the post office thing!

Cynthia, glad to hear that most of your babies made it safely! I hope you can find the other two and that they're okay. Re: 18 week olds - There are a few of them that come up to me in the yard and will watch me, follow me, or politely peck at my feet, but I'd always figured that it was because they associate me with food. Or because they're friendly, like that BO/EE I got from you. She's sweet. The only time I've seen any of the girls squat was the one time I made a grab for the BSL and she dropped, but that may have been because I had a handful of her tail and she was digging in for traction........ahem.......My RIR is RED in the face, but no squatting. If I go to pet her or pick her up, she dodges or else slides away from my hand, kind of like how some cats or small children avoid being touched. Well, so long as she's gonna pull the whole "Don't touch me!" attitude, I consider her fair game for extra cuddles, muahaha

Lisa, my Amer's and EE's all seem to go pink in the face more slowly than the other breeds I have. The gray EE I got for my mom is 26 weeks old, and she's still a very polite pink. No hot pink, no red, and no signs of getting on with maturing any time soon. I hadn't expected her to start laying until she was around 9 months old, though.

On a different topic, I'm excited! I'm going to Moab tonight to camp out for the deer hunt, and I won't be back until Monday. I'm worried about my babies in this heat, ugh! My mom and brother will be around to care for them, but they both have work this weekend, so I'll be stressing the whole time. At least I'll get to try out the new truck off road.
