What genes do breeders use to get chicks with V-Shaped combs?

I am not sure what specific gene (biologically speaking causes the V-shape comb). I can offer you at least a couple of breed names that have it. Hope it helps.

Biologically? Then if it's a biological chance, how come all of those breed's good examples have the V Shaped Comb?

Because it is in their breed gene pool. So if you want to introduce the V-Shape to your flock, you would need to get the gene from somewhere, hence you need to bring a bird that has the gene for it and its actually a V-shape comb bird.
