It really depends on what time of year you are going on vacation. With just 2, you really should be able to leave them for a week if their area is predator proof.
But... it really is best if you could find someone who can come and check on them at least once. In the summer, they can go through water really fast.
I live in GA too. And I have gone on vacation and left my 8(or so) chickens for a week. Usually I have one of my neighbors check on them once in the middle of the week (they get to keep the eggs). I used to ask my Father in Law, but he forgot once and the poor things ran out of water before we got home. Go figure- the strangers were more reliable than family! But if your waterer is large enough and you only have 2-3, filling it should get them through a week.
Just ask one of your neighbors. Or call the 4H office or vet in your area and see if you could get some references. Because whether you get chickens now, or in the spring, or 3 years from now... vacations will always be an issue. You might also put an ad on Craigs List... just to find other chicken people in your area. You'd be surprised how many of us there are, who'd be willing to help you out.
