In other news, I am OBSESSED with vegan gnocci!!!!

I like to make it with carrots or sweet potato.
Its about 30 minutes to make it, but most of that is cooking time, its actually very easy to make!

Simply boil up either potato, sweet potato, or carrot, until soft. Then mash up, and mix with flour and salt to form a dough. Then slice and shape the gnocci and boil.

For the sauce I like to heat a small amount of coconut milk, pesto, lemon juice, salt and pepper, and then toss the gnocci in it. I sometimes add fried tomatoes.
Its delicious!

First off, it appears that you are feeling much better -- good for you!

Secondly, I chuckled over the "vegan dog burger" part. I've also never eaten duck.

Finally, I am impressed with the amount of work you did to make your duck-style meal. I have to admit to buying too many pre-packaged frozen vegan entrees lately. Your creation looks tasty, and I'm glad it was successful.

I'm not generally a gnocchi fan, but yours looks and sounds good.

I really enjoy learning new ways to make vegan dishes that I not only like, but that others will appreciate as well.

However, I have to admit to using "veganess" in a slightly naughty way this weekend. When I offered to make tofurky sandwiches for some unexpected out-of-state visitors, I knew they would decline; they decided to go to a restaurant in town.
 
I made the iced coffee really simple, normal coffee made cold, lots of ice, caramel, and plant based milk! I'm excited to experiment with it.
I'd really like to try oat milk next, apparently thats good in coffee.
Its a shame you cant buy it vegan in grocery stores! Would certainly save time in the morning.
We use oat milk in our coffee and it is amazing, won't use anything else. Do you have the brand of the vegan caramel sauce? That coffee looked amazing, much better than my plain black coffee this morning. lol

and your vegan duck meal looks amazing, much better than my rice and veggies I had last night. I get stuck in a rut of eating the same thing over and over and want something different. I need to venture out of the veggie seen and try some of the plant based meats or protein alternatives. I do eat eggs from my chickens but that is it for real meat/eggs/fish

definitely feeling better! My sense of smell and taste is almost 100% again now, Im so relieved! It's horrible to crave something and then when you finally eat it, you cant taste it!

I used to be the same honestly. Until recently I would only buy products, I rarely spent time cooking or experimenting with this kind of thing- but honestly its cheaper and more rewarding for me to make my own! I love it.

The dog burger analogy was the best I could do 😂
Id feel the same with rabbits, goat, anything like that, its very strange to me because I never saw those products as food, ever. So I dont miss them and trying to replicate them is *weird*
I know thats just me being in my head too much. The vegan duck style pieces were actually DELICIOUS and I cant wait to make them again! Perhaps with spicy ramen noodles!

Not sure of the brand, I could check, but this is in the UK, so Im not sure you'd be able to get it--
I actually made my own caramel recently, and it was super nice although I didnt have all the right ingredients.
It was mainly sugar, vegan butter, coconut milk.


Honestly simple veggie meals can be super good too! I've been trying to eat more variety, and be healthier. I like curry, thats always really yummy. I use either kidney beans or chickpeas, and then make a lovely sauce with curry seasonings, like cumin, and onion, ginger and garlic.
My folks hate it when I make curry, they dont like it much, and cant stand the smell of the cumin etc. I love it though, I question if we're even related.

I'm not vegan or vegetarian, but we love fruits and veggies in my house. I source my meat from neighbor and a farmer not far from me. I rarely shop at big box stores.

I did try vegetarian for a few months but I was hit with the worst depression of my life. Once I reintroduced meat the depression went away.
 
I tried making a vegan duck style meal yesterday, which freaks me out a bit because... well, even when I ate meat, I never ate duck, ever. And now I have and very much love my ducks, so trying a duck style vegan meat felt so weird. It was like someone saying "hey, wanna try this vegan dog burger!"

Anyway, I got over myself and went ahead and tried it, and it turned out SO good!!!!
I blended up chickpeas, flour, tahini, beetroot, salt, and water until it formed a thick paste, then I added more flour to form a slightly sticky dough.

Then I sliced it into burger type shapes, and then sliced it lightly on both sides to get a good texture. Then I boiled the thick slices in soy sauce and water for about 15 minutes. Then I took them out, covered in corn starch, and fried lightly until golden...

Then I made a mix of soy sauce, lime juice, diced garlic and chili, maple syrup, and a little of the cooking water. Then covered the slices in this sauce and let them simmer until it had thickened to a glaze.

Then I sliced them up and put them on a bowl of couscous. SO yummy!View attachment 3285455View attachment 3285456

I did try vegetarian for a few months but I was hit with the worst depression of my life. Once I reintroduced meat the depression went away.
I tried going vegan for a year, ages back, it ended about the same way. Bad mental health, and not too healthy physically. I went back to meat and dairy at that point and felt better.

Though I went vegan again last year, and I've been more careful this time. I find a comination of supplemented vitamins, and homecooked varied meals, have made me healthier than I have ever been before! It is a battle to keep up with everything you need sometimes, and the first time I went vegan I didnt know what I should be eating.

It can be a really hard transition for some people to make, really have to be careful with it
 
Free ranging is definitely an improvement, but is it still inhumane? Personally I think yes, due to being bred over and over in order to continue producing large amounts of milk- having the calves taken away, and due to the amount of milk they are bred to produce (which can lead to deficiencies and will eventually break the cows). Even with the dairy cows themselves aside, the calves they produce have to end up somewhere, and for males, that is usually a plate.

Its possible to use a small amount of milk temporarily in a humane way, but it still wouldnt be needed, and it wouldn't be enough to be worth it to most people.
There's also a less talked about difference between animal welfare and animal rights- We dont want to cause suffering, but we also dont want to exploit animals for their products.

I miss dairy a lot, milk in my coffee, it was great. Possibly one of the harder things to give up, but I got over it pretty fast and rather like soya milk now!
My neighbors had a milk cow and when she called they did milk sharing because of how much cows produce, the calf couldn't drink enough, if they didn't milk her it would be very painful for her udders. Fun fact, the mom would keep the high fat cream for her baby, lol. Leslie said she could feel that she was holding her milk back. Animals never cease to amaze me.
