I had several turkey processed by a licensed processor. Several large 20 - 30 lb birds have visible dark veins on the breast. I have not had many turkeys done in the past but we have done many of our own chickens and ducks and I have never run into this before. I had them professionally done to be able to sell them and this is not attractive. Any ideas why this happened or if it is just normal. These were either standard bronze of white hollands.
Thank you

I always process my own and haven't run into this. I did have a young turkey get attacked by a stray dog and it was killed, but the juggler had not been bitten, so it did not bleed out properly and when I skinned it to cook for my dogs, found a lot of blood streaked through the breast meat. It may be just a co-incidence, but I thought it was not being bled out that caused it. It looked so bad, we fed it to the dogs, but did not eat any of it ourselves. I always make sure animals are well bled out, or I don't want any part of it. Let's see what others have to say, because a processor would make sure every bird was bled out, by cutting the second juggler, if conditions were where the blood was coagulating too quickly. If a bird died and had not been bled, this might be the case, but I don't think a processor would process a dead bird?
