Very Red one minute...

what are you referring to? Their comb? Sometimes it changes color with the temperatures, I think they use it as a cooling/heating method. I have a rooster with a rather large comb, and his is darker when it's cooler and bright red when it's hot.
 
Mine always do that too. When out roaming the yard, picking bugs, and settling disputes, their combs are usually bright red including faces/wattles. Then when they decide to take a break and lay down their faces/combs/wattles will turn a pale orange to a pale red.
