Waist friendly cookies that use lots of eggs!

I'm a weight watchers member and so I was looking for waist friendly cookies that I can make and I came across one that is TWO COOKIES for 1 point AND uses a LOT of eggs! ha ha Everyone Enjoy!

Chocolate chip meringue cookies:
8 egg whites
1/2 c. mini semisweet chocolate chips
1 tsp vanilla extract
1 c. splenda

(I also added a tsp of unsweetened cocoa but that's optional)

1. Preheat oven to 200 deg. (use parchment paper or spray and then lightly flour your cookies sheets)
2. Beat egg whites until stiff peaks
3. Gradually beat sugar into whites until mixed in and peaks get glossy shine to them
4. Gently fold in cocoa (if using), vanilla, and chips
5. Scoop mixture onto cookie sheets, and put in oven.
6. Bake for 1 hour or until golden and no longer stick to sheets
7. Then turn oven off and let sit in oven for 1 hr.
8. After an hr remove from oven and cool on wire racks until hardened and cooled.

Enjoy!!! :-) And they're such a healthy cookie!
 
Hershey has a sugar free chocolate chip that they are selling even at our podunk WalMart. They aren't "mini" but you could chop 'em.

That looks delicious. I bet we can find a way to alter it and make different kinds too like peppermint ones.
 
I bet...lol it could be our project! ha ha I am giving them away for christmas so maybe I'll be working on it ha ha! Let me know if you have any luck!

Any kind of extract in place of the vanilla should give lots of variations....might take a little test cooking.
