Want to make a real change in health care in your country?

My kids won't touch butter... they love margarine.

I never buy it. DW does. I try to educate but.... well you know.

I use real butter when I cook, but I keep a tub of Promise (cardiologist endorsed) for toast. I made homemade chicken & dumpling soup last night. This was the first time I made dumplings with butter instead of eggs. OMG we could not stop eating- it was TOO good. The dumplings wouldn't be good for the sautee pan though.

Another thing that grosses me out is cake frosting in the tub. I know we're trying to talk healthy here- but everyone has to celebrate sometimes. And kids do need some fat in their diet (especially my string beans!) I've been making my own with cream cheese, sour cream, vanilla & and powdered sugar. If you want chocolate- just add cocoa (which is very good for you).

There was also an article on Yahoo the other day about all the benefits of hot chocolate. And it's cheap to make! Mmmmmm mmmm!

Oh yeah, real hot chocolate. When I make mine it's like 99% cocoa powder and 1% added sugar! Sometimes I don't add any sugar. These mixes you can buy are so full of sugar it gags me!

First I learned to cook from scratch because we were broke and it was cheaper
The next step was that I had food allergies, and still too cheap to buy the specialty items
Now, I can cook just about anything from scratch. My garden and my chickens are becoming a major focus in my life and I LIKE IT. I teach my kids, friends, random people cooking. I taught the boy scouts and cub scouts under the "thrify" and "prepared" and all that.
One of the first cookbooks I bought was "Diet for a Small Planet".
I like your idea of volunteering - at a school? - to teach cooking and chemical light cleaning. That a person doesn't have to have all that packaged (*&(! will see what happens.
 
Since having kids I have made a change to the make it from scratch camp. Its cheaper, kids can learn to cook this way and I know whats going into the foods they eat which is better for their health and ours. I just used up all the potatoes and garlic that I harvested last fall, I still have onions in the cellar and I'm growing kale and letttuce in a cold frame in my unheated greenhouse. Real Food

I've been traveling down this road, for a long time. I am convinced, that the agrifood business, has intentionally sabotaged the lives of everyone, who likes convenience, for the sake of a larger profit.

Each of us can manage our own lives, through better choices, but until the majority of the consumers, get on the bandwagon, and affect the bottom line, changes will not be made.

Since we are all into chickens, here, we can use that, as a prime example. Commercial, factory farm eggs sell, for about $1.40 a dozen....Why would someone, who is pinching pennies, drive the extra miles, and pay more, for free range, fresh eggs?

I just made my first batch of homemade egg noodles, last night, to be cooked, this afternoon. Flour, eggs, salt. Flour cost about $.20, if that. I consider the eggs free, even though they really aren't. It took about 15 minutes of work, and about 2 hours of drying, in the dehydrator. I love doing that stuff, but the average American would rather spend a dollar, with no effort, for what appears to be the same thing.
