If I recall correctly, elk is a Type 2 diabetic. Type 2 diabetics have to watch their sugar intake, and honey is pretty much pure sugar, like any other syrup. A pie, on the other hand, has much less sugar in it, as there is the dough and the fruit meat, neither of which have nearly as much sugar as a syrup, and can be sweetened further by the use of nonsugar sweeteners -- like the kinds that you find in little packets for your coffee.
I think that the amount of sugar that one can eat varies from person to person, but it seems to be that the less sugar a Type 2 diabetics eats, the easier it is to manage the condition -- unlike Type 1, Type 2 management focuses more on diet and exercise than insulin.
All this stuff being said, this is pretty much speculation on my part. I "specialize" in Type 1 stuffage, not Type 2.
