Not worried about the egg at all. They're fresh from my backyard. I'd NEVER make this mayo with store bought eggs or if I did I wouldn't eat it after 48 hours or so. My mayo is usually still good after 10 days. I also have been known around these parts for cracking raw eggs into our shakes. YUM.Yawn, Good Morning everyone! Boy oh boy did I ever sleep in. Lazybones me. Just beginning to stir. Half a cup o coffee is all so far.
Back to the Mayo ?? of the day. This is raw egg, do you have any concerns about consuming this?

And just think...
...with the cayenne and ACV you'll lay better and have no worms.![]()

ACV = Apple Cider Vinegar. Preferably unpasteurized, with "mother". Braggs is a good brand. Amazon has it cheap, so does Vitacost.comOkay at the risk of sounding ignorant what is ACV?I want to make the mayo and I do not think this is something I have in my cabinet can I pick it up at the market?![]()

Haha! They can use the workout! We lost the gasket on our blender a while back and haven't replaced it. I am also notorious for burning out motors in hand-held mixersNo, it's mostly egg yolks and an oil and a tiny bit of an acid (vinegar or lemon juice). No whites. Olive oil makes it aioli. butter and tarragon makes it bearnnaise. lemon and butter is hollandaise. plain vegetable oil is mayonnaise.
I do make bernaise ( I don't know how to spell this apparently) for steak oscar. I don't bother making mayo. The process is similar. It's not hard, just time intensive. Use a blender or food processor, don't whisk it unless you want a sore arm!
I make it in the blender, drizzle the oil through the little hole in the top - using whole eggs. Problem with homemade though, is that the eggs aren't pasteurised like commercial mayo, so it has to be eaten fairly quickly.
I also add a bit of English powdered mustard for a little extra bite. It's hot like horseradish.
that's why I like making bearnaise -- the hot butter sort of cooks the eggs a little.Quote:You can reduce the risk, by coddling the eggs before making the mayo. Doesn't eliminate the risk though. I have found HM mayo just doesn't last long without separating. That and Best Foods is better than my HM, is the reason I buy it.

So, me too with Himself - we don't usually do gifts etc. So, I'm going to make a fantabulous scrumdiddlyumptious cake. Although, I do have to be very careful about eating it myself, since I'm on a pretty strict diet. I'm thinking Coconut/pineapple/rum with glace cherries and whipped cream.

only I'm going to try a heart shaped one!
I make all our mayo, once a week, in the blender. Like this:
Crack 1 egg in the blender
add 1/2 tsp mustard
1tsp ACV
1/2 tsp salt
1/8tsp cayenne
turn on blender on low and leave off the lid
start pouring/drizzling veeeeeeery slowly about 1c light olive oil and it will begin to thicken. When it starts to thicken you can pour faster, and if it doesn't thicken up enough add more oil to the consistency you want. Takes me 2 minutes every Monday morning and we never finish it all but come close most weeks.
Home made mayo is great for mac. salad, or potato salad. Because you use so much at one time.
i make it but each time I use a different recipe from the internet. Trying to find the best one.

Pretty well. The boy only got scared and kind of paniced once once but was able to calm and refocus. His parents took lots of pics that they will be sending me. I got 5 full frames. And sent them home with a saucer size piece of comb full honey.I agree! CR, how did the colony-move go? Are you making those adorable metal chickens?
