I did not know that about Costco. Good info!

Costco carries prime quality meat as well as the choice or select. Much of time the the price for a prime brisket is much cheaper than grocery stores for their choice brisket. Only the restaurant supply will get choice cheaper on sale. And of course Costco choice brisket is cheaper than prime but its not necessarily a huge difference in price.
 
That's what the butcher counter is there for.

Mom and Dad prefer the 3/4 inch cuts. I usually do 1.5 inch. If I cut the meat into (hubby's) bites size cubes, I can quickly cook it to medium and he's happy
I didn't want to hang out at Fred Meyer, but I have got prime rib cut to size at Costco before.
