Well, in my case, we throw a lot of leftovers away because neither of us eat lunch and it's never enough for two meals. So my thinking is, make a little more so that it actually makes two meals and freeze dry the leftovers. I have friends who say the leftovers are far superior to just frozen.
Also, I've decided I don't like canned green beans at all anymore, even when I can them. I think I might be happier with the results of food preservation in the freeze dryer.
I even watched a video the other day of someone who processed raw eggs in her freeze dryer. They have to be used in scrambles, omelets or baking, etc, but still a great way to preserve them when I have too many. When she rehydrated them, they still had the consistency of a fresh egg.
I can think of so many ways to use it, but I just got it, so I'm reading the manual and getting familiar with it before I try it out.
I love the idea of not losing the nutrients in foods that I do in canning, but I'm sure I will still use both.
