Maybe instructions on line, but if you bone out the chicken breast and thighs, and same with duck, half it open (butterfly again so it is thinner but bigger, and roll the chicken up inside the duck meat, then put inside the turkey, it is easier than it sounds.
I will warn you though, a young duck is expensive to buy!!!!! Very exoensive !
Dressed young rabbit is going for $15 a pound, I think duck is about the same.
I bought a young duck a few years ago and it was tough and had little flavor, must have been a farm bird not allowed to free range I guess.
I hear if you are to butcher them about a week earlier you can start them on some gamey feed regimen, like add a bit of sage leaves and such to their feed so the meat has more gamey flavor..but have never raised ducks.
I plan on it next spring, and a few turkeys.
I hatched turkeys out last year and sold them all..we had no shelter then for big birds.
Next year I hope we do, and I hope we also have our well and a house!!
