And, why is Territorial Seeds on the list? Didn't Monsanto buy them out? They are trying to monopolize on the seeds just like the few big food companies supply all our food.

I LOVE that list from garden of eatin--how handy is that???

cowgirl--I noticed Johnny's on there twice--one is the Johnny's selected, and the other is just Johnny's.. Is there a difference?? I also googled Territorial/Monstanto--there is quite a bit of info out there and most of it worth reading....

I used to work at a local clinic and one of my co-worker's mom would bring in tamales and sell them. How is the Michoacan style made? These were wrapped in the corn husk, the corn meal and the meat inside. The meat had some seasoning/light sauce on it....but oh my so yummy. I could make myself ill on them. We also have a couple of the "taco wagons" that we go to occasionally....yum...street tacos. When I worked down in Brewster at the clinic we would walk to the local bakery and I would get fresh baked bread and the goat cheese and pig out on that. Okay, I am hungry now. Guess it is time for my bowl of cheerios (doesn't that sound yummy?)

Well there are few different types in the state of Michoacan. The most indigenous ones are called Corundas and they are wrapped into the shape of a pyramid and mostly dough if they have any filling at all. Most tamales are like tacos or pizza, you can fill them with whatever you want. The ones I make are michoacan style because of the thickness of the dough (not very thick) and the sauce used.
Classical tamales are Indian (native american in origin) and usually had javelina or turkey in them with a pumpkin seed/chile pepper sauce.

Others around Mexico are wrapped in green corn husks or banana leaves and have a chocolate sauce (mole) or a bright red sauce called adobo.

YUM...I love Mole sauce. All this is making me hungry. I have never had tamales with dough...only with corn meal. I am eating peanut butter toast right now and it is just not doing it. I wish I lived closer, I would buy some tamales from you. I have never had javelina - how close to pork is it?

I have never had javelina myself but I am told its mostly greasy dark meat and delicious.
When I said dough I meant MASA which is the word for corn flour dough, not corn meal. Corn meal is not nixtamalized (treated with lye) and still has the germ attached providing that grittiness that you get in cornbread. Corn flour has been nixtamalized and washed and the germ and hulls removed so you get only the starch part and the its much finer.

Not being haughty, just sayin is all.

there are a couple of local (puyallup) ladies that make and deliver Tamales--we just had a bunch delivered the other day.. YUM-O.


ALSO--you guys-- I think we should learn to save and preserve our OWN seeds and trade them amongst ourselves.

My mom was a huge seed saver and started ALL of her garden stuff from her own seeds. Pretty cool I think.

Speaking of seed saving...I read an article that said, although Mexican farmers recognized Mexico was the birthplace of corn and were desperately saving seed in the 4000 year old manner, that many are now capitulating and planting monsanto's Frankencorn. Their pollen has contaminated almost all the corn seed stocks in the world

How sad.

I'm originally from San Antonio and we give tamales at Christmas the way most people give tins of home baked Christmas cookies. I have already made close to 200. Most of them were eaten by my kids! They love the green chicken ones.

Wish I knew how to make the ones in the banana leaves.
 
Thanks for posting all the seed stuff! I'm crossing out all the Monsanto seed that is in my Territorial catalog which arrived yesterday.

I'm usually fine at getting the plants started indoors, but I often kill them when I move them to the garden, and then have to buy starts at ACE. I need a greenhouse! My little cold-frame gets too stuffed.
