And don't let them go to seed! I had a huge bed two years ago of root crops. Parsnips, carrots, turnips, beets, and let it go to seed. Last year it reseeded itself and was ok. This year, I had monster root vegetables in there this spring, and I wasn't sure what was 1 yr old or 2 yr's old. Some of my parsnips were 10" across at the top! HUGE! And very deep rooted and almost impossible to turn over the dirt. So cut them back or pull them out when they start going to seed. My advice anyway.
