And yes I will try to stay up! Actually for some reason that hasn't been a problem lately, I haven't been getting to sleep till well after 2am most nights!!!

So, just to let you know this recipe came from Sunset this issue.
Pumpkin Cheesecake

They call it pumpkin -orange cheesecake with Chocolate crust & salted caramel topping.
I did not do a chosolate crust nor any topping...did not need it.

Crust:
1 package of chocolate wafer cookies (9 oz) crushed
1/2 cup butter melted

Filling:
3 packs of Philly Cream Cheese at room temp
3/4 cup granulated sugar
1/2 cup brown sugar
1 TB flour (I used 2 T GF flours)
4 large eggs at room temp
1 cup canned pumpkin
1/4 cup each:
heavy cream, sour cream and maple syrup.
zest of 2 medium to large oranges
2 tbsp pumpkin pie spice

Topping:
6 TB store bought good quality caramel topping
1/8 tsp table salt
1/2 cup coarsley chopped toated pecans
flaked sale, (such as Cyprus sea salt flakes or Maldon salt) for garnish

1) Make crust by crushing the cookies in a food processor, preheat oven to 350, whirl in butter, pour into 9 inch spring form (I have parchement in the bottom of mine) press down & up 1 " on sides.
Bake 7 minutes at 350 let cool on rack, reduce oven temp to 300.

2) Make filling: In a large bowl combine sugars, crean cheese & flour until smooth, beat each egg in 1 at a time (I did all at once

Add remaining ingredients until just blened, do not whip extra air into this !!!

3) Set springform & pour ingedients into it.
I covered the entire pan in 3 layers of foil, and bake about 1-1 & 1/4 hours at 300, just until the middle is still barely jiggly.
Let it cool!
The recipe calls for extravident use of a water pan below the springform but it is not necessary!
Extra air whipped in at mix can cause the cheese cake to crack...so I tried not to over whip, still got a few but it came out otherwise PERFECT!!!!!!!!
heavenly, maply-caramelly good!!!!!!!!!!

Let cheesecake cool about 1 hour, then refridgerate over night & pig out the next day!!!!!!!!!

Anyone doing gluten free:
I used y topping for Apple Crisp as a crust plus a cup of crushed Gluten free ginger snap cookies...that is oats, flax seeds, flaxseed meal, brown sugar, butter, sorgham meal...make a rough crusty mix...walnust, almonds & pressed in the bottom for the crust you see here.
I did not do the topping....doesn't need it & if you do want to put on "aires" you CAN drizzle with maple syrup for a fine topping!!!!!!!!!!!!!

It's weird not having anyone here for New Years, first time in forever.

Making steak, garlic rosemary potatoes, and I guess brocolli, ugh, too cold for salad. No dessert except grapes, I guess. Also too cold for grapes, but what can one do?

I made a salad earlier:

juliened a large napa cabbage, added a few large fistfulls of spinach, a handful of slivered almonds, and 1 each: diced pear, diced apple and diced persi,mmon and the naked orange from the cheesecake (

This tossed & served with fresh blue cheese crumbles.....YUM!!!!!!!!

Looking for Malbec, from the Columbia Gorge area...Sparksman, Gifford-Hirllinger, aMaurice................
dad LOVES Penot Noir...........and this is a new wine variety I want to surprice him with....maybe you can help me decide?

The WA thread moves quick, probably so it doesn't wash away. Also, my fav parsnips are boiled then sliced, with carrots treated the same way, then fried in bacon grease, yummy!
