I try not to hard boil eggs that are from "today", but otherwise it doesn't seem to matter. I use an egg cooker, 16 minutes for where I live cooks them perfectly...my mother lives 400 miles away, uses the same cooker, but she has to cook them for 25 minutes! We found out that we cooked eggs for different times a few years ago when she was sick and I was staying with her and my nephews, one of which absolutely loves hard cooked eggs in any form! I made 2 batches for the 8 of us (mom, me, 6 kids between nephews and mine)...they were soft boiled instead of hard!
