Good Morning, I finished putting up eight quarts of the finest stock ever. I can mine and follow the directions for a soup/broth. I also use the necks,skins, bones, giblets, ( no feet this time...didn't know about them but probably will in the future)

how do you pile the feet do you have to dip them in hot water to??

Never did feet. Never GOING to do feet.

Don't have to, don't want to. I'll raise another 2 birds to sacrifice to soup first. Much easier to me.

The rest of you can do as you please. Just don't invite me over for dinner.

It is real easy and you end up with a very, very clean foot full of collagen and great for stock. You don't have to use them if you don't want too but I like getting my money and nutritional value's worth and there is absolutely nothing unclean or gross about them.

Amazon has the Ball canning book.
The is a recipe for both beef and chicken stock and how to pressure cook both.
I am going to try the chicken one using the neck and backs. Preserving is another one of my hobbies. I think is fun.
I wasn't planning on the feet.
I worked on a hog farm many years ago.
I don't see how any one could eat pigs feet.
There is no way you could get that tast out of those feet. YUCK!

All my dog does with raw bones is get 5 days of the runs, usually on the carpet

Do you HAVE to skin the feet for stock? I just prosessed some roosters and the kids had a blast playing with the feet ("Look mum, if you pull this white bit the toes curl up!") but I wasnt sure about how to cook them and my back was hurting more than a bit by the last one so just threw them away.

Regretting it now, even though the stock from backs, necks and gibblets was fab and best yet, it all cooked till after the kids bedtime so I didnt have to share
