I just wanted to get some thoughts on what breed rooster would be a good protector and watchful eye on my free range flock

Absolutely!^^^It is not so much a breed, but more of a maturity level. A rooster needs to be close to a year old. If you know someone nearby that has chickens, often times they have an extra rooster that has just been too nice to cull.
Another advantage of getting an older rooster, is usually by a year, their dispositions are set.
