Do the nipple waterers work just like those ball-point vacuum tips that are used for pet water bottles? If I decide to take the chickens with me when we move, I'll definitely buy a few.

No. The small stainless steel rod that you see is moved when the bird pecks at it and water comes out then. There is actually a type of valve inside. You can fill this, then turn it all around and the water will not come out. Only when the bird pecks at it....or you touch it with your finger
