Watermelon rind jelly

k so i found this recipe online

4c chunky rinds
3 1/2 cup sugar
2tbsp lemon juice
1t cinnamon
1 pack liquid pectin


put rinds into blender till its puree
should have about 2c liquid

in pot put juice sugar cinnamon and puree and cook til boiling
add pectin cook for 15 min and you know the rest


i did all this except the cinnamon part and i added red food coloring to give it more of a watermelon look......it tasted awsome except it was the consistensy of a sugar daddy put spoon in and lifted jar full of jelly



? is what went wrong

does anyone know
 
Over cooking pectin would do that.follow the pectin directions never have I needed to boil it for 15 mins. Normally I use certo for jellies as no name pectin doesn't seem to jell like it should.
 
several of the recipes for watermelon rind jelly says boil for 15min
i thought it was a bit much also
i will try for 1 min like pectin box says
 
I'm no expert but I wonder if it would work better to cook the rind 15 minutes, then just till boiling once the pectin is added?

the white part after you eat all the good stuff

i thought it might make more use of the whole melon i can get my money worth this way
it does taste really good it was just really stiff
