Do I leave the egg there or replace it with a golf ball to encourage the others to lay? The last time I went through this my hens started laying before I knew they were even old enough to lay! I found a large pile of eggs in the cats outside box.

Well, I suggest you heat a skillet, add butter, crack the egg over the pan, wait a minute or two, flip it over for another minute, and serve ... with buttered toast! Voila! Breakfast!

The Big Hen, who's cranky because the 7 biddies aren't laying yet, and my farm market ran out of eggs this morning.

LOL! Like I didn't already know that! My question is do I need to leave the egg in the nest to encourage them to lay more or can I remove it with no problems?

Use golf balls in the nests. Makes it much easier and cleaner to collect the eggs everyday. In the summer you dont want to leave eggs outside too long as they will start to develop if they are fertile and will go bad very quickly if bacteria gets into the eggs. Collect atleast once a day.
