Humane bleed, proper scald, fast pluck, clean evisceration, quick chill in ice water bath (unless you prefer to take it before chill to do your own air cure). We usually process on Saturdays but can do other days if you have a group of enough birds to justify warming up the scald water. 4$ per Chicken\\Duck, 6$ per Turkey.
