This is kind of a late post,but last year I came home from a weekend trip to find 9 out of 10-- 2 month old birds dead, and every one of them was missing its head. That was all that was eaten. I researhed it, and came to the conclusion that it was the work of a weasel. Any thoughts on the subject? They were all in their indoor cage.
 
I have read that a weasel can get through a really small opening, I want to say 1" by 1".
 
Sounds like it was probably a weasel although rats will also sometime just eat the heads as well. Weasels can fit into very small openings. I saw one squeeze into an opening roughly around the diameter of a quarter.
 
Your other option and possible predator...raccoon. Great dexterity, take the heads also.
 
There was a study in NC that found that most of the attacks that were attributed to weasels were actually done by rats.
