I'll only cut dead trees unless a live one's in the way. Never heard of an evergreen oak.Definitely no bow sawing for you then.
I try not to take down the large diameter grown trees unless necessary.
I try to cut out the saplings at around 3 inch diameter max. This means I don't have to split and they dry quickly. It takes at least two years for the evergreen oak here to dry to 15% moisture content. It burns oaky after a year but a lot of energy is still going into drying the wood instead of heating the stove.
