I processed my first batch of turkeys ever a week before Thanksgiving. Then I had to decide if I should take a gamble and try to cook the biggest one (40 pounds dressed out) for my family, even though I wasn't sure how it would turn out, or go with one of the smaller ones. I ended up doing the big one and it came out great! I bought the turkey roasting bags and had to use two to cover the whole thing. I made an herb butter and put carrots, celery, onions and herbs in the cavity. It was awesome! It didn't take nearly as long to cook as I thought it might. Yay for convection ovens! I loved the turkeys alive, and they're delicious dead. I will for sure be having turkeys again.
