Well I DID IT!! Pithing vs. Hatchet.... Graphic pics****

After seeing your pictures and reading the post I think I can do this, next year. This year I already have an appointment at the processor. The first video and pictures I watched of this grossed me out and I was like there is no way I am doing that. It looks like you were rinsing the blood away as you went or you just let them bleed out well first. I have never seen the pithing not sure about that. My FIL has always used a hatchet and my Grandfather hung them on the clothes line by their feet and went down the row and cut their necks and let them bleed out there. Thanks for the good pictures it doesn't look that hard.

Done properly it would be next to impossible to contaminate the meat with neural matter. While cutting the jugular isn't necessary it does excelerate bleeding out.
 
Great job on the birds. A sharp pair of pruning shears makes the taking the feet off easy.

Get a faucet for the sink. With a little creative engineering you can run the hose to the faucet and turn it on and off at will. A bit of PVC or section of rain gutter from the drain will take the waste water and other fluids away from the work area.

Feed the innards you don't use to your other birds or the cats...
 
Sharp knives are a must... makes things go so much faster...


Also you got it right with higher sinks... I made the mistake my first time doing 100 birds with low sinks and tables... by the end of the day you can't move!

Running water... that's another one too... gotta have it.

How did they taste? I didn't read the whole thing... you may have already said...
