I have 2 Welsummer roos I do not wish to keep. How old should they be for maximum weight and good meat?

In general, DP cockerels need to be at least 4 months, and generally closer to 6 months to get meaty. Then their growth slows and the meat gets stronger flavored and tougher, but remains excellent for stewing up to about a year or even longer (Coq au Vin). Older cocks make fantastic stock. Younger than 4 months will make good frying chicken but you won't get much meat off them.

I had a Wellie roo that we kept with the flock, but he died unexpectedly at about one year old. Made a delicious stew, amazingly concentrated flavor.
