Went to the state fair. What does SQUIRREL TAIL mean?

It could mean an awful lot of different things.

Obviously it could be the hairy appendage the protrudes out above the rear end of a squirrel.

Other than that... I don't even want to hazard a guess.
 
Squirrel tail is when the tail of the bird stands past vertical. It will actually lean forward a bit over the back of the bird, kind of like a squirrels tail does, thus the name. This is a defect in most breeds except Japanese.
