you sure have thanksgiving late haha! (we have ours in October here in Canada)

but got to have, pumpkin pie.

for me the turkey is okay i like when we put sausage in the neck and roast it in the turkey neck cavity.

This is basically it. I do not add sage, but I do add a couple/few chopped hard boiled eggs. I also boil the turkey neck, heart, and gizzard to use the stock. I pull the meat from the neck, dice it, the gizzard, and the heart and add it, also.

One time before I got smarter, I threw away a Turkey neck. My moms Thanksgiving was ruined because clearly I'm not an appreciative child of an immigrant, from a village in a poor country .

Similar here. Bake cornbread (not sweet corn bread mind you, but proper cornbread) let it set in the oven for 4-5 days with sourdough bread all diced into little pieces. No eggs. No cream of chicken.

If one makes less than half a five gallon bucket of dressing, it doesn’t turn out right.
 
My grandma's mashed potatoes!
She adds butter, sour cream, cream cheese, half and half, seasonings and then she cooks it a second time in a crock pot so it gets a crispy ring of toasted heaven.
One of my cousins won't eat them. more for the rest of us.
