What Age For Cornish Hens?

My meaties are about 3 wks. old now and I'm wondering when to cull for a cornish hen. What should the weight or age of the hen be?

I believe you butcher at 2-2 1/2 pounds for a cornish hen (assuming you mean the little, tender birds you buy at the stores.
