What are you baking now?

Just made my first ever batch of cornbread. I know, I know, I can hear your gasps of horror right now.

I love this cornbread. It's sweet...to me, I don't know what everyone else considers sweet..and really yummy even without butter.

chicken breast strips, marinaded with sun-dried tomato viniagrette (Kraft dressing), served with baked potato & steamed broccoli.

I prepare all the chicken breast with the same method. slice into strips, put 1 meals' worth into a ziplock, add dressing/marinade, vacuum and freeze. Label with date & flavor.
pull it from the freezer, and straight into the oven (take it out of the ziplock first

) at 425 degrees for 30 minutes. add a starch (potato, rice, pasta) and a veggie (canned, fresh, frozen) and you've got a decent meal almost anyone could enjoy.

They have a light texture. I just use a little olive oil & some kosher salt or sea salt. Sometimes I'll add a little dried dill for a different taste and sometimes maybe a little balsamic vinegar before baking. You get that salt-and-vinegar taste & it doesn't have the transfats or carbs that you get from a potato chip.

I love cooking so much- I've been meaning to make those Kale chips but everyone in my household hates kale but me. I can eat it plain, raw, with nothing on it!
