I made 2 pumpkin pies for a Veterans Day dinner tomorrow night. No pictures this time, one pie looks perfect and the other almost looks burnt even though it's not. Not sure what happened with that one but I'm almost embarrassed to send it with my husband to the dinner. I'm just hoping they taste ok...Libby's pumpkin pie recipe, made with my own pumpkin puree and a Pate Brisee crust. It's a crust recipe I've never tried and was very frustrated with.
I also made lemon cookies from a recipe I've been wanting to try. I don't know that I care for them all that much, but my husband likes them. They have a fairly strong lemon flavor.
The cookies use a boxed lemon cake mix, 1 cup melted butter, 1 egg and 1 tsp? of lemon zest. I didn't add the lemon zest in mine because I have no lemons. The dough is thick, roll into 1 inch balls like you would with peanut butter blossoms, roll in white sugar, place on cookie sheet and slightly flatten with bottom of a cup dipped in sugar. Bake at 350 for about 8 minutes.
At least I think that's the whole recipe..I'm going from memory. If anyone is interested in the exact recipe, let me know and I'll get my cookbook back out. I've had a bad day and need sleep.
