I've been canning beans and just didn't have time or kitchen space to cook anything. I should have come to some of your houses for dinner, LOL!

My fat butt is on a diet. So, slim-fast bar, softshell clams, and fresh fish (broiled) w/italian dressing. Yogurt for dessert (french vanilla). Mmmmmm.

We had chicken fried steak that I made a mess of. It looked like a pancake/hamburger patty sandwich. I really can't fry anything.

I should stop trying. Mashed taters and gravy. Garden fresh green beans. At least my gravy ALWAYS turns out good.

We had "Stacked Enchiladas". A friend told me about them. I browned 3 lbs ground elk, added chopped onion midway through, about 1/4 cup flour to thicken the sauce. The sauce consisted of a large can (46 ounces) tomato juice and a can of El Pato sauce. Mix it all up until it's good and hot.

Everybody makes their own enchiladas layering a tortilla (corn or flour), then sauce, cheese and sour cream. YUMMY!!

I thought about putting it together in a casserole, but opted against it.

This did make a HUGE amount, but I put half of it in the freezer for a time when I take a lazy day and don't plan anything.

Pulled pork BBQ sandwiches, salad, corn on the cob, and baked beans, yummmm it was sooo good.

I made eggplant "meatballs", chicken sausage and pasta for supper.
